The Today show weatherman, who co-wrote the book with his daughter—a professional chef—explained that the recipes were deeply personal, passed down from his mother and grandmother. Since they never wrote them down, his daughter had to carefully recreate each dish from memory.
Roker shared that he cooks regularly, with his mother’s oxtail stew and pineapple upside-down cake being two of his go-to meals. But while discussing his passion for cooking, Colbert interrupted with a glaring issue he couldn’t ignore.
The Shrimp Tikka Masala Controversy
Flipping through the cookbook, Colbert landed on Roker’s shrimp tikka masala recipe and immediately called attention to an unusual detail—the shrimp still had their tails on, even while submerged in sauce.
“Look at those shrimp. Why do they still have their tails? Why would you do that?” Colbert questioned.
Roker, realizing the pattern, laughed as he noticed that every shrimp dish in the book—including his shrimp and grits recipe—had tails intact.
