Al Roker recently sat down with Stephen Colbert on The Late Show to promote his latest cookbook, Al Roker’s Recipes to Live By: Easy, Memory-Making Family Dishes for Every Occasion. While the conversation started off lighthearted, it quickly took an unexpected turn when Colbert pointed out a major issue with one of Roker’s recipes.
In a clip later aired on The Today Show, Colbert initially praised the book, calling it “beautiful” and urging viewers to buy it. However, he wasn’t entirely on board with everything inside.

“Here’s my problem with it,” Colbert said, flipping to a page featuring Shrimp Tikka Masala.
“Look at this—those shrimp still have the tails on! What the hell, Al Roker?! Who leaves tails on shrimp in a dish like this?”
Roker, unfazed, laughed and pointed to the cover of his book.
“I’ve got tails on these shrimp too,” he quipped.
But Colbert wasn’t letting it slide.
“So, am I supposed to roll up my sleeves, grab a poncho, and start peeling shrimp while eating? This is like toenail clippings in my food. Why would you do this, Al?”

Al Roker Defends His Shrimp Decision
Despite Colbert’s hilariously dramatic reaction, Roker stood by his culinary choice and offered a simple explanation:
“It’s a handle. You just pick them up and eat them!”
But Colbert wasn’t convinced, insisting:
“Al, you don’t eat shrimp with your hands in a dish like this!”

Roker, doubling down, responded with confidence:
“Sure you do! You should try it—it’s delicious!”
While Colbert admitted that the rest of the book was fantastic, he playfully concluded the segment by sighing:
“You disappoint me, Al Roker.”
The Today Show Team Reacts in Disbelief
When the clip aired on The Today Show, Roker’s co-hosts—Laura Jarrett, Willie Geist, and Kaylee Hartung—were visibly stunned by the exchange.
Laura questioned Roker’s cooking choices, while Willie and Kaylee looked equally horrified.
“In Tikka Masala, of all things? In all that sauce?!” Laura exclaimed.

Roker, unfazed, laughed off their reactions:
“There’s more flavor in the tails! You just take your fork, remove the tail, and eat.”
Willie attempted to defend his colleague, arguing that since it’s Roker’s cookbook, he can prepare his recipes however he pleases.
But Kaylee wasn’t having it.
